Christmas Cookie Recipe 2006

Oatmeal Cranberry
White Chocolate Chip Cookies

2/3 cup butter unsalted
2/3 cup brown sugar
2 large eggs
1 1/2 cups old-fashioned oats
1 1/2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1 6 oz. package of Sweetened Dried Cranberries (I used Ocean Spray Craisins)
2/3 cup White Chocolate Chips

Preheat oven to 375 degrees. Using an electric mixer, beat butter and sugar together in a medium mixing bowl until light and fluffy. Add eggs, mixing after each addition well. Combine oats, flour, baking soda and salt into a small mixing bowl, stir. Then slowly add dried mixture to wet mixture a small amount at a time, mixing after each addition. Once mixed add dried cranberries and chocolate chips.
Drop by well rounded teaspoon onto un ungreased baking sheet. Bake for 10-12 mins...check after 10 mins.....Let cool.

Hints......Don't skimp on cranberries or chocolate chips........Real easy recipe....I doubled this recipe...and it was wonderful.......Enjoy......
